“White gold” from the salt marshes of Brittany – a delicacy for your kitchen.
Fleur de Sel de Guérande IGP, also known as salt flowers, is a special, 100% natural, handcrafted sea salt harvested from the salt marshes of Guérande in Brittany, following age-old traditions and strict IGP (Protected Geographical Indication) standards.
The salt forms a thin crystalline layer on the water’s surface, making its crystals exceptionally soft and delicate.
It is neither washed nor finely ground – all trace elements and its natural purity are preserved.
The salt is aged (sometimes for up to two years, depending on the producer) before it is released to the market.
Nutritional composition:
- NaCl (~97%) – the main component, providing intense saltiness.
-
Magnesium and calcium, potassium and other trace elements are precisely reflected in the salt’s composition – because the salt is unwashed, the oil retains its full natural mineral saturation.
-
Moisture content ~13%, so the crystals crumble, retain more moisture, and enhance the flavour’s penetration into the food.
The “Sel de Batz-sur-Mer” IGP mark – a guarantee of origin: ensures the salt’s authenticity and terroir origin, sourced from the Batz-sur-Mer/Guérande salt marsh region.
Harvesting process:
-
In summer, seawater flowing into the salt pans evaporates intensely under the influence of the sun and wind, until the salt concentrates to approximately 250–280 g/l and crystallises on the clay floor.
-
A salt worker (salinier) with a “las” – a long wooden pole – manually draws the salt from the floor and transfers it to drainage platforms (“ladure”), where the salt naturally drains overnight,
-
After 9–12 months of storage, it is carefully sorted by hand, left unprocessed and unwashed, and then packaged.
Uses
-
For baking and cooking – add it to the cooking water for pasta, rice, vegetables, or meat.
-
For salt-crust cooking – ideal for baking fish or chicken.
-
Finishing salt – sprinkle over hot dishes just before serving.
-
For curing – excellent for marinades and salting before baking.
- For a bath ritual - add 1 kg of salt to the bath and let the magnesium penetrate your skin.
