This Gros Sel de Batz-sur-Mer – is more than just salt: it brings history, the forces of nature (sun, wind, sea) and tradition to your cooking. This is hand-harvested sea salt, made according to traditions that have remained unchanged for centuries. It offers not only flavor, but also an authentic culinary experience – every French household uses this very salt.
A natural product, free from chemical treatment or washing, it retains the full spectrum of minerals.
It has a unique quality: it is almost impossible to oversalt food with it. This salt is unrefined, so it retains all its natural minerals and is rich in natural magnesium.
Nutritional composition:
- NaCl (~97%) — the main component, with an intense salty taste.
-
Magnesium and calcium, potassium and other trace elements are reflected in the salt’s composition — since the salt is not washed, it retains its full natural mineral content.
-
Moisture content ~13%, making the crystals crumbly and moist, and helping flavor penetrate food.
The IGP label “Sel de Batz-sur-Mer” – a guarantee of origin: guarantees the salt’s authenticity and terroir origin, from the Batz-sur-Mer/Guérande salt marsh region.
Harvesting process:
-
In summer, ocean water flows into shallow ponds and evaporates intensely under the sun and wind, until the salt concentration reaches approximately 250–280 g/l and it crystallizes on the clay bottom.
-
The paludier (salt worker), using a “las” — a long wooden pole — manually draws the salt from the bottom and transfers it to draining platforms (“ladure”), where it drains naturally overnight,
-
After being stored for 9–12 months, it is carefully hand-sorted by grain size, left unprocessed and unwashed, and packaged.
Uses
-
For baking and cooking – add to cooking water for pasta, rice, vegetables or meat.
-
For salt-crust cooking – ideal for baking fish or chicken.
-
Finishing salt – sprinkle over hot dishes just before serving.
-
For brining – perfect for marinades and curing before cooking.
- For a bath ritual - add 1 kg of salt to the bath and let the magnesium penetrate your skin.
Ingredients: 100% Guérande salt
